これだけでは場合によって足らない時があります。
システム日付を「YYYYMMDDhhmmss」で取得したい時は、文字列の抽出と文字の置換が必要になります。
抽出の場合は、こちらです。

ある変数の先頭（文字列の左端）からm番目の文字からn文字だけを取り出すには、
「%V:~m,n%」とする（mは0から始まる）。

置換の場合は、こちらです。

「%V:s1=s2%」の書式を使う。s1をs2に置換する。
～～
という事で、結果を書いてしまうと、
①YYYYMMDDで取得する場合は、
> echo %date:~0,4%%date:~5,2%%date:~8,2%
②hhmmssで取得する場合は、
> set time2=%time: =0%
> echo %time2:~0,2%%time2:~3,2%%time2:~6,2%
①と②を文字列連結する事で、「YYYYMMDDhhmmss」形式で取得する事が可能になります。
